Pan patholi
is a sweet dish prepared on nagarpanchami and navrathri festivals….
Panpatholi is
nothing but a sweet coconut stuffed in rice batter and steamed in turmeric leaves;
the aroma of the turmeric leaves the patholi rolls while steaming makes the whole
house smell divine; this is what makes the patholi special.
I wanted to post this recipe before
nagarpanchami but I had only eight turmeric leaves in my garden, which I
reserved for this auspicious nagarpanchami day.
Ingredients
1 cup Par Boiled
rice/Kerala rice
1 cup Coconut grated
1 cup Jaggery
Cardamom
powder
Rice flour as
per required
Salt to taste
Method
Soak Kerala
rice for 2hours.
After 2hours
grind soaked rice to a smooth paste by adding little water and salt
Add rice
flour as per required so that the rice paste become thick
Take jaggery
add 2-3tbsp of water and boil until jagerry melts and start boiling; add
coconut and stir until it become little thick; add cardamom powder mix well;
keep aside to cool
Meanwhile
apply rice batter on turmeric leaves
Now fill the
coconut jaggery stuffing on half of the turmeric leave as shown in the above
image.
Then fold the
leaves into half.
Now steam
cook folded leaves for about ½ hour.
After ½ hour,
serve Panpatholi.
Note
The cooking time depends on the quantity
of panpatholi; as I had only 7-8 panpatholi so I steam cooked for ½ hour.
