This
pickle is an Andhra version Mango pickle.
Ingredients
10-15
Mangoes
250gm Chilli powder
250gm
Mustard
1tbsp
Fenugreek
250gm
Salt
1tsp
Turmeric
½li
Groundnut oil
2tsp
Mustard
1tsp
Cumin
250gm
Garlic crushed
Method
Cut mangoes into pieces; add salt and turmeric
mix well keep aside.
Grind mustard and fenugreek to powder separately
and keep aside
A Add chilli powder, mustard powder and fenugreek
powder to mangoes, and mix well
Add half of the garlic to mango pieces.
Add oil (reserve 2tbsp oil ) to mangoes
pieces.mix well so that all spicy get coated very well and close led and keep
aside for whole day.
Next
day open the led, oil will start floating on top. Heat 2tbsp oil(reserved) add
mustard once mustard is crackled add cumin then crushed garlic ,then add this
to pickle and store in a bottle.
Note:
In case oil does not float, then you need to add oil
and keep again for another whole day.
Add salt and red chilli powder according to
the sourness of the mango.
If mangoes are sour, follow this
proportion. Else, adjust the red chilli powder and salt accordingly.
Use nice red variety of chilli which gives
nice colour yet not too hot.
