In this recipe, brinjals/eggplants are slit
and stuffed with spicy masala and cooked.

Brinjals/eggplant
1tbsp
Dried coconut powder/dessicated coconut powder
2
tsp Groundnuts
2tsp
Sesame seed

sp turmeric
2tsp
Coriander powder

tsp Cumin powder
1
Onion finely chopped
1tbsp oil
½
Lemon juice
Salt
to taste
Method
Dry
roast groundnuts and sesame seed separately and keep aside to cool.Remove the
skin from groundnuts.
Grind
ground and sesame seed to powder, and take in a bowl.
Add
dried coconut powder, turmeric, chilli powder, coriander powder, cumin powder
and salt mix well.
Add
finely chopped onion and mix well.
Make a six slits on brinjals/eggplant
Stuff
above masala and keep aside.
Heat
oil in pan, add stuffed brinjals and saute it.
Close
the led and cook until brinjals/eggplant are half cooked.
Once
brinjals/eggplants are, half cooked add remaining stuffing masala mix well,
sprinkle very little water and cook by closing led.
Once
brinjals is cooked, add ½-lemon juice just before removing from gas. Serve with roti.
